These mixed varietals (shade grown Arusha & Bourbon) are shade grown in loamy soil, harvested between April to September. Cherries are handpicked and pulped the same day before fermentation, with wet processing occurring at the farm using nearby spring water. Drying beds are used constructed mostly of bush material, farmers then deliver their parchment to a collection point where a changing of ownership sees premium price levels for the Cert Organic parchment & further processing done at New Guinea Highlands mill in Goroka.
New Guinea Highlands Coffee have recently begun a program that assists farmers in obtaining Organic Certification. This coffee is the product of this assistance along with works surrounding HIV/AIDS prevention, financial management, gender equality awareness and coffee husbandry.
